This quick and easy sweet and sour recipe uses frozen oriental vegetables that are made in sweet and sour sauce made with pineapple juice, brown sugar, and rice vinegar.
Ingredients for Sweet and Sour Vegetables :
- 2 1/4 cups (approximately) frozen Stir-fry vegetables
- 1 tablespoon oil for stir-frying
- 1/2 cup pineapple chunks
Sauce
- 3 tsp brown sugar
- 1 tsp rice vinegar
- 1/8 to 1/4 teaspoon salt
- 1/2 cup pineapple juice
- 1 tbsp. cornstarch
Method to prepare Sweet and Sour Vegetables :
In a small bowl, mix together the sauce ingredients.
Heat the oil. When oil is ready, add the frozen vegetables. Stir-fry until tender but not overcooked. Add pineapple chunks and sauce, giving sauce a quick re-stir.
Cook until thickened.
Serve it hot.
