Hyderabadi Biryani is a popular non vegetarian dish from Hyderabad in Andhra Pradesh. A truly delicious Hyderabadi Biryani will draw you in with in aroma and engulf your taste buds with sheer nirvana.

Ingredients for Hydrabadi Biryani :

  • 1 cup Basmathi rice
  • 1 cup Fresh thick curds
  • 1 cup Water
  • 2 cups Mixed diced vegetables (potatoes, carrots, peas)
  • 2-1/2 tbsp. Oil
  • 1 tsp.Ginger-garlic paste
  • 2 cut lengthwise Onions
  • 6 flakes Peeled garlic
  • Salt as per taste

  • 1 Lemon
  • 1 1/2 tbsp. finely cut mint leaves
  • 1 tbsp. Cut coriander leaves

 

  • Fry the following in 2 tbsp oil & grind with a bunch of coriander leaves.
  • 1 tbsp. Cashewnuts
  • 7 Small onions
  • 8 Green Chillies
  • 1/2 inch piece Ginger
  • 1 inch piece Cinnamon
  • 2 Cloves
  • 2 Cardamoms
  •  

 

Method to prepare Hydrabadi Biryani :

Wash & soak rice for 10 mins. Drain water & fry them for 2 minutes in 1/2 tsp. of ghee.
Heat pressure cooker, add oil & suate' garlic & onion pieces in it. Mix ginger garlic paste & diced vegetables. Fry till vegetables are tender. Add ground masala paste & fry for some time. Beat curd & add it along with 1 cup of water into the whole.
When it starts boiling, add rice & salt, cover lid & cook on a low flame.
Keep the weight as soon as the lid is closed. Remove from the gas after 2 whistles.
Squeeze lemon juice & add cut mint leaves & coriander leaves.
Mix & Serve it hot.
