Black Bean Tortilla Pie is a low calorie, little bit spicy fat free diet Mexican dish that is easy to prepare .
Ingredients for Black Bean Tortilla Pie:
- 2 cloves Garlic minced
- 8 oz. Green Chilies finely chopped and drained
- 4 cups Mission Tortilla Chips coarsely chopped
- 1 cup Cheddar Cheese shredded
- 1 (15-oz) can Black Beans
- 1/2 cup lowfat 2 percent Milk
- 2 Egg Whites
- 1 cup Onion chopped
- 1 cup Green Bell Pepper chopped
- 1/2 cup Chicken Broth
Method to prepare Black Bean Tortilla Pie:
Preheat oven to 375°F. Spray 2 quart casserole with nonstick spray.
In blender, mix beans, milk and egg whites until they get smooth. Set aside.
Now cook onion, bell pepper, stock, garlic, chilies in 10 inch vessel over medium heat for 5 minutes, stirring occasionally, until onion is tender.
Place 1 cup of chopped chips in bottom of casserole. Spread vegetable mixture over chips.
Sprinkle with 1/2 cup of cheese. Bake for 30-35 minutes until hot and cheese is golden-brown. Serve with chili sauce if desired.
