This little mini Mexican pizza is very easy to prepare and is very deliciuos in taste.


Ingredients for Mini Mexican Pizza:

  • 1/2 tsp dried oregano leaves
  • 1/2 cup vegetarian re-fried beans
  • 1 tomato finely chopped
  • 1/3 cup tomato sauce
  • 1/2 cup low-fat pepper jack cheese

 

  • 1 12-oz tube low-fat refrigerated biscuit dough
  • 1/4 cup yellow cornmeal
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 1/2 cup frozen meatless soy crumbles
  • 2 tsp chili powder
Method to prepare Mini Mexican Pizza:

Preheat the oven to 400 degree F. Separate the dough into biscuits, then separate each biscuit into four thin pieces along the lines.
Dip each side into cornmeal and place on ungreased cookie sheet.
In a skillet, heat the olive oil over medium flame. Now add onion to it, cook and stir until tender, about 5 minutes.
Stir in meatless soy crumbles, chili pepper and dried oregano.
Cook and stir until crumbles defrost.
Add re-fried beans, tomatoes and tomato sauce all together and stir over low heat for 2 minutes.
Remove from heat and spoon mixture on top of dough rounds.
Sprinkle it with cheese and bake for 8 to 10 minutes, or until crusts are golden brown, and topping is hot, and cheese is melted.
Mini Mexican Pizza is ready to relish.
