Thai Chicken Fried Rice is a tasty Thai dish. It's easy to cook and is very delicious. Make it as spicy or mild as you like.
Ingredients for Fried Rice With chicken:
- 2 tbsp fish sauce
- 3 tbsp peanut oil, or vegetable oil
- 1/2 cup frozen peas
- 1 egg
- 3 spring onions, finely sliced
- 1/2 cup fresh coriander or basil
- 3 cups cooked rice
- 1 cup cooked chicken or turkey or 1 cup raw chicken
- 4 tbsp chicken stock
- 2 cloves garlic, finely sliced or crushed
- 1/2 minced green or red chilli for medium-spiced rice
Method to prepare Fried Rice With chicken:
- Prepare the cold rice by mixing in 1 tbsp of the oil. Stir well.
- Place remaining oil in a deep frying pan. Add garlic and chilli to it. Stir-fry over medium-high heat until fragrant.
- Add chicken (or turkey) and 2 tbsp stock. Stir-fry enough to cook the meat. If the chicken is raw, stir fry until cooked.
- With a spatula, push ingredients aside and crack egg into the pan. Stir quickly to cook and break up the egg.
- When egg is cooked and most of the liquid has been absorbed, add the rice plus fish sauce. Stir fry, keeping the heat medium-high.
- Add frozen peas and continue to stir-fry another 1-2 minutes, or until you can hear the rice "popping".
- Sprinkle salt according to taste.
- Sprinkle with spring onion, plus coriander or basil, and serve hot.
